Sponge cake is a cake based on flour (usually wheat flour), sugar, butter and eggs, and is sometimes leavened with baking powder.It has a firm, yet well aerated structure, similar to a sea sponge.

Flour                          –       300g

Sugar                       –       200g

Eggs                          –       300g or 6 large eggs

Butter / Margarine       –       300g

Flavor                        –       1 tsp. (Vanilla)

Baking Powder            –       1 TBSP

Preservatives              –       1 tsp.

-Prepare pan and Set aside

-Sieve flour, preservative and baking powder into a clean bowl

-In your mixer bowl place butter and sugar, beat till light and fluffy.

-Turn off mixer and scrape sides of bowl and add the flavor beat to incorporate for 2mins

-on low speed add beaten eggs to batter

-Still on low speed add flavor mixture and beat to incorporate properly

-Scrape side of bowl and beat some more to properly combine.

-Pour batter into pans and bake till cool.

Cake is ready when a toothpick comes out of the cake clean.
